Ingredients
- chicken breast (Costco)
- oregano flakes
- smoked paprika
- garlic powder
- extra virgin olive oil
- salt
- pepper
Preparation
- preheat oven to 350 degrees in bake or convection bake mode
- rinse chicken breast
- line baking tray with aluminum foil
- cut sheet of aluminum foil to wrap chicken and place on counter
- place chicken in center of aluminum foil sheet
- slit the chicken breast every 1 inch
- baste both sides of chicken breast with olive oil (it’s okay to be generous with the olive oil – it’s good for you)
- sprinkle seasonings in the following order
- salt
- pepper
- garlic powder
- smoked paprika
- oregano flakes
- repeat step 8 on other side of chicken breast
- insert the baking thermometer probe into the center of the thickest part of the chicken breast
- wrap chicken in aluminum foil
Bonus: Roasted Tomatoes
- get Campari tomatoes at Costco
- cut tomatoes into quarters and place on tray
- sprinkle salt, pepper, oregano on tomatoes
Bonus: Roasted Jalapenos
- slice a jalapeno pepper and place on tray
- sprinkle salt on the pepper
Bonus: Roasted Potatoes
- get the baby creamer tomatoes (prewashed at Costco)
- pour some olive oil in a small bowl and using your hand, wet a handful of potatoes in the olive oil
- place the potatoes on a baking tray
- sprinkle salt, pepper and rosemary to taste (optionally: baste potatoes in minced garlic or sprinkle on some garlic powder)
Cooking
- set the thermometer to beep when it reaches 155 degrees
- place the tray in the oven
- when the thermometer beeps, take tray out and leave alone for 5 minutes
When cutting the chicken, always sharpen your knife first as it make cleaner cuts.
Eating
- while the chicken is resting for 5 minutes, eat the roasted tomato and pepper before they get cold
- after 5 minutes, slice the chicken breast and eat it along with the potatoes
